Canadian Maple Sweet Potato Black Bean Chili

2 TBSP Alpha DME Coconut Oil
1 Onion, chopped
4 Cloves Garlic, minced
1 Large can BPA Free Diced Tomatoes
1 Can pureed Sweet Potato
1 Small can Black Beans – drained & rinsed
3 TBSP Grade A Dark Maple Syrup
1 tsp Sea Salt
3 tsp Cumin
2-3 tsp Chili Powder (to your spice tolerance, enjoyment)
½ tsp Chipotle Powder
½ tsp Turmeric
2 Cups Broccoli
2 Cups Baby Spinach
Black Pepper to taste



In a large pot, heat Alpha DME Coconut Oil on medium, and lightly sauté Onion for approx 2 minutes. Add the garlic & cook for 2 min more, being careful not to burn the garlic. Add in everything else, stir well, cooking on medium-low for about 20 minutes. Stir regularly until your broccoli is bright green and tender. Add as many tasty toppings as you like, and then dig in!

To Serve, top with any or all of the below:
Organic Plain Greek Yogurt
Organic Raw Cheese
Vegan Coconut “Bacon”
