Marvelous Mushroom Miso Gravy


2 TBSP Alpha DME Coconut Oil
1 Medium yellow onion, minced
2 Cloves Garlic, minced
1 Small Pack Crimini Mushrooms, sliced
½ Cup Red Wine
3 Cups Veggie Stock
2+ TBSP Gluten Free Oat Flour
2 TBSP Chickpea or Light Soy Miso
3 TBSP Nutritional Yeast
1 tsp Dijon Mustard
Black Pepper to taste
2 TBSP Olive Oil



Heat up your Alpha DME Coconut Oil on medium.

Add the onions & garlic and cook until translucent.

Add the mushrooms and cook until the water is released from them, and they become quite soft.

Turn down the heat a bit and add the wine to the pan, scraping the pan to get all the tasty onion & garlic bits mixed in, then add the veggie stock and simmer it all for approx. 7 min.

While that’s simmering, get your flour, miso, nutritional yeast & dijon ready to add to the mix.

Slowly add these to the simmering dish, whisking constantly for approx. 2 min. Pepper it up, mix in your Olive Oil, and Viola!

*If it’s too lumpy, add more stock, or if it’s too runny, add more flour. Serve anywhere gravy is needed.
