Olympic Monster Pumpkin Cookies

Great snack to enjoy while watching the 2018 Olympics, enjoy! Go Canada Go!

Ingredients:

Dry Ingredients:
2 cups GF oat flour
1 cup GF large flake oats
½ cup unsweetened coconut
2 TBSP ground flax
2 tsp cinnamon
1 tsp aluminum-free baking soda
1 tsp pink salt
¼ tsp pumpkin spice
1 TBSP Ultimate Maca

Gooey Ingredients:
2 ripe bananas, mashed
1 small can pumpkin puree
½ cup Alpha Coconut Sugar
½ cup Alpha DME Coconut oil, melted
1 free-range egg (or 1TBSP flax with 1TBSP water for a Vegan recipe)
2 tsp vanilla
2 TBSP almond butter

Extra Goodies:
½ cup dark chocolate chips
¼ cup cacao nibs
¼ cup sunflower seeds
¼ cup pumpkin seeds
¼ cup raisins
¼ cup cranberries

 

Directions:

How to Git ‘er Done:

*Preheat oven to 350° F.

*Throw all the ‘Dry Ingredients’ (flour, oats, coconut, flax, cinnamon, baking soda, pink salt, nutmeg, Maca) in a bowl and mix.

*Toss all the ‘Gooey Ingredients’ (pumpkin, sugar, mashed bananas, coconut oil, egg or replacement, vanilla, and almond butter) in a separate bowl and mix.

*Combine the Dry Guys and the Gooey Guys.

*Stir in all of the ‘Extra Goodies’ & Mix well. Eat at least one scoop of delicious batter…you deserve it!

*Use a small ice cream scoop or spoon to make cookies. Press ‘em down a bit with a fork as they won’t really spread out at all.

*Bake for 25-28 minutes (test with a toothpick to see if centres are cooked).

*Place cookies on wire rack to cool and/or eat as many as you can before anyone notices you made fresh cookies!
