I took a classic recipe and added an Alpha touch. Make sure your tomatoes are nice and ripe to get full flavour and juiciness. Use the bruschetta on your favorite bread or biscuit, as a salad topping, or in your pasta. Here it is served with Cheesy Flatbread - a recipe from the Keto-genesis Cookbook
1 cup mixed tomatoes, chopped
1/4 cup basil, chopped small
1 tsp. white wine vinegar
Salt and pepper to taste
- Combine all ingredients in a bowl.
- Allow to sit 15 minutes before serving to flavours can blend.
