- In a small bowl slowly add the water to Drinking Chocolate and mix until well combined.
- Add vanilla and chia seeds, lightly stir until chia seeds begin to absorb water - about 5 minutes.
- Fold in the walnuts.
- Cover the pudding and refrigerate for 2 hours, or until you're happy with it's consistency. It should be thick and pudding like.
- Serve on its own or top with a little bit of fruit and lemon zest.
